Happycall Char Siew


I couldn't resist the temptation! I bought myself the Happycall pan a couple months ago. =) It's the double sided pan from Korea that supposedly sold like hot cakes on tv shopping in sg. I saw the advert one day & I have to say, like any aunty, I was quite taken by it. Then that very same weekend, the Sunday Times ran an article on the popularity of the pan, after I read it, I confirm...guarantee with chop...that I wanted that pan! So I joined an online spree & got myself one at a very good price. Happiness =). Thus far, it is as good as it was advertised and I'm very happy with it. I've made the very usual omelettes, fried rice, stir fries and fried fish with it. But today, I am going for one of the Happycall pan reciepes, homemade char siew. So why make your own char siew when you can buy char siew rice downstairs for $3? Well, coz I can choose the cut of meat, coz it's fresh & most of all coz it's fun =). It really is quite effortless, just marinate the pork overnight & cook in the pan next day. The char siew from this recipe is very much Hong Kong style. Hubby likes it much & to my surprise, Fat cheeks who usually does not really eat meat loves it too. She kept pinching the char siew when I was trying to take the pics. I had a hard time keeping her sticky fingers away. =)

Chocolate Mousse Cake


Mousse cake has always been my favourite cake. Thus far I've not attempted to make any coz years ago I've tried and it was an utter failure. The recipe I 1st attempted required the use of gelatine. It's very tricky to incorporate gelatine into whipping cream. If the temperature is not right it will not incorporate properly. The cake will not set & it turn into a gooey mess. Then recently, I came across this recipe which does not require the use of gelatine. It looks straight forward & does not require rocket science, so I decided to give it a try and am I glad I did. =) Here's what I did:

Fried Carrot Cake


It's the Easter long weekend and so my cooking adventures began. =) I've made quite a few things and will be sharing my recipe here soon. First up is fried carrot cake. I initially bought radish for another recipe, had left overs and so I decided to make carrot cake. It's not difficult to make and I have to say, homemade radish cake definitely scores on taste. Hubby & Fat cheeks really liked it. I used half the portion to make dinner & there was hardly enough to go around coz we all wanted second helpings. =) Here's what I did:

Easter Cookies


Happy Easter! Made these Easter bunny cookies for my darling to bring to school to share with her classmates & teachers. They are cute aren't they? The cookies are made with the sugar cookie and marshmallow fondant recipe I posted earlier here and here. I really enjoyed making them and I'm very pleased with the way it turned out. The cookies are yummy and are not as sweet compared to the ones I made with royal icing last xmas. Decorating these cookies are really fun & addictive. Am already trying to find an excuse to make my next batch. =)

Chocolate Souffle


This was a special request from my darling Fat Cheeks. We were watching a program on the Food Network together when she saw someone eating a chocolate soufflé. She went "Mummy! I want to eat that...can you make it for me pleaseeeee....?". There was no way I could turn down those puppy eyes & chubby cheeks =). I a search at the Food Network website and found this recipe here. Honestly, I'm not a fan of soufflé. Maybe I didn't make it right. To me it's like eating warm mushy chocolate marshmallow. It's very much like a chiffon cake but without the springy texture. Nevertheless, Daddy & Fat cheeks likes it. If they are happy, I'm happy. ^^
