Creamy Mushroom Pasta

Finally, my very first entry. Yay! I've been wanting to start my very own blog for sometime now. Just that I never got around doing it. Time manangement can be challenging when you have to work full time, run after a vivacious little 2 year old toddler and "star gaze".

Last weekend, to expend my little munchkin's energy we decided to bring her to a mushroom farm. I've never been to one and I thought it would be fun. This is the farm we went to: http://www.mycofarm.com.sg/content/home/. They have a small retail shop and they do conduct tours during the weekends. The tours are very short as we were only allowed to view the shiitake mushroom "plantation". Nevertheless, it was good education and we enjoyed ourselves. At the end of the tour, I bought a box of mixed mushrooms which consists of: shiitake, oyster and willow mushrooms. Good time to try creamy mo ku pasta. Here's what I did:


Ingredients:
1 box of mixed mushrooms - cut into bite size pieces
200g bacon - cut into bite size pieces
1 medium size onion - diced
3 cloves of garlic - diced
1 cup cream
1 cup chicken stock
1 tbsp olive oil
a dollop of butter
Parmesan cheese

Method:
Fry bacon till slightly crisp
Add onions and fry till translucent
Add mushrooms and stir fry till you smell the mushroom aroma
Add garlic and stir fry for another minute
Add butter and mix well
Pour in chicken stock and cream
Season with salt and pepper to taste

Let the sauce bubble for a couple of minutes and tada...it's ready to go with your choice pasta. I served my "mo ku" sauce with penne pasta topped with parmesan cheese. Verdict? It was yummy! Little munchkin not only finished her pasta, she even licked the bowl. I will definetely do this again, yumz...but not very good for the waistline though...
