Cupcakes with Butter Cream frosting

  
We made cupcakes! A pretty & dainty cupcake never fails to put a smile on my face. =) As much as I love frosted cupcakes, I seldom make them coz the pretty butter cream frosting is really rich, sweet & it's very high in calories. You will get what I mean when you see the list of ingredients below. This time however, we decided to indulge ourselves a little and made frostings for our cupcakes. For a healthier cupcake, we made yoghurt cupcake which I have posted earlier here. In all we made 6 cupcakes but we only topped 2 of them with the frosting. Even then, much to Fat cheek's dismay, I make her remove most of the cream before consumption. She complained a little but still enjoyed her cake very much. =)




Ingredients for butter cream frosting:
-140g butter, soften at room temperature
- 280g icing sugar
- 1-2 tbsp milk (depending on the consistency of the frosting)
- 1tsp of vanilla essence
- a few drops of colouring (optional)


Method:
- cream butter until pale & fluffy
- add icing sugar gradually, beat till smooth
- add vanilla essence then add milk bit by bit while creaming frosting in low speed till it reaches piping consistency 
- stir in colouring if using
- spoon into piping bags or store in fridge if not in use immediately
- Note: make sure the cupcakes are completely cooled before piping. For frosting stored in fridge, it needs to be left at room temperature to soften before piping.
