Yam Fritter


This is a dangerously addictive snack food! For every batch that I was frying, Fat cheeks & myself probably ate half before it made it to the plate. Daddy is out-stationed and so its just us the naughty girls munching away at home. I think this is a great finger food to serve at parties or gatherings. It's crunchy on the outside but soft and savoury inside. It's almost like eating concentrated fried yam cake coz it has much more yam than rice flour compared to the regular yam cake. Very nice. =)



Ingredients:
- 600g yam
- 100g dried shrimps (soaked & chopped into small pcs)
- 120g rice flour
- 1 cup water
- 1 chilli (To make it less spicy for Fat cheeks, I de-seeded & cut out all the fibres on the inside as there's where all the heat is.) 
- 1 stalk coriander
- 2 stalks spring onion
- 1/2 tsp baking power
- salt & pepper to taste

Method:
- Peel yam and grate yam
- cut coriander, spring onion and chilli into small pieces
- mix above ingredients and flour together
- add water to make a stiff batter
- heat cooking oil (I shallow fry my fritters in the wok with oil about 1.5cm deep, turning them over every now & then)
- drop in tablespoon of batter & fry till golden brown.
