Christmas Cookies Galore!

Exams are over, my birthday came & went, and Christmas is here!! Merry Christmas everyone! I have been ambitious and wanted to bake as much cookies as I can for my family & friends. This season, I think I baked at least 100+ pieces of cookies & all in a span of 1 week. It was tiring but really fun and very satisfying. This round I also managed to pipe delicate snowflake patterns on to the cookies, a technique which I failed miserably last time. Overall, I'm very pleased and proud of the cookies. Hope my family & friends enjoy them as much as I do. =)

Organic Soybean Milk


I've been really lazy posting blog entries nowadays. I'm still active in my kitchen, just slow when it comes to posting entries here...tsk tsk tsk. This is one example, made it a while ago but only posting now; homemade organic soy bean milk. I've started making soy bean milk weekly a couple months ago after reading the benefits of soy milk here. You don't need a fancy soy milk machine to make it; I make mine the manual way and it takes less than half an hour. Hubby and Fat cheeks loves this and it's really full of goodness. By making my own soy milk, I get to choose the quality of soy beans, adjust the sweetness and the "thickness" to our taste. On top of that, the soy bean pulp (also known as okara) left behind can be used to make delicious snacks. I use it to make tuna fish patties and Fat cheeks can't enough of that. I will share that recipe here in my next post. =)

Bread Bento #7

It's been a while since I've made Fat cheeks these cute bread bentos. So the other day, she gave me the Puss in boots puppy eye look and said "Mummy...you know I'm so sad coz teacher ask me why I don't bring cute sandwich to school anymore...sigh..." Aiyoh, so poor thing right?? Hahaha so stright away she gets this Bunny from the Gift Dragon. I know I know...I spoil my baby to bits. ^^

Cookies: Spongebob, Girl Bear & Angry Bird!

October was a busy busy month! Fat cheek's celebrated her birthday, had her graduation concert and is now preparing for her ballet exam in mid Nov. Then there's her school orientation coming up...yup, my baby is going off to primary 1 next year! How time flies! My exams are also coming up...ugh...and I don't look forward to it at all. Bleh! Anyways, before I start stressing about my exams, I had lots of fun the past couple of weeks baking cookies for Fat cheeks, her friends and fulfilling a couple of cookie orders. I was really thrilled to be able do these orders. Thank you for the support! Here are some photos to share. ^^

Hello Kitty , My Melody and Friend Cookies.


It's cookies galore! I'm now totally addicted to decorating cookies. All these cooking addiction is killing me! So much I want make, so much I want do, so much I want to experiment but I have so limited time!! I'm so obsessed some days I spend hours google'ling websites and pouring over tutorials. Fat cheeks get upset with me coz I hog the Ipad and that means she can't play her favourite games. If only I'm this hard working when it comes to my studies. This batch was made last weekend. Fat cheeks was suppose to help but instead she spend most of the time sneaking the fondant into her mouth when I was not looking. =)

Hello Kitty / Cupcake / Heart Cookies



We baked cookies for Fat cheek's teachers as Teacher's Day gift this year. I thought they look really lovely and am very pleased and proud of how it has turned out. The cookies were made with the sugar cookie recipe I've posted earlier here and decorated with marshmallow fondant recipe here. Fat cheeks was very much involved in the process. She was the one who painstakingly cut out the "Thank You"s  for all the heart shaped cookies, then pasted them on to the cookies one by one (we made 8 sets). It took quite a bit of time and patience but she did it =). The Hello Kitty cookies were done by me as it required more precision. Though Hello Kitty looks simple the placement of the eyes and nose are very important, if misplaced Hello Kitty will not look like itself. When the cookies were completed, she helped to pack, seal & tie the ribbons. I'm so very proud of my baby. It took about a day to bake, decorate and clean up but it was totally worth the time. A friend comment that I can start selling cookies and coincidentally, I do have another friend who is interested in placing an order. Hmmm...maybe I really can??

Caramel and Chocolate Mini Doughnuts


This is my 2nd batch of doughnuts. I left half of my dough in the fridge the day before and honestly I was not too sure if it will rise properly when cooked.  Am so happy when it turned out fine. After retrieving the dough from the fridge, I rolled it out, cut them with cookie cutter and left them on a floured tray at room temperature for about half an hour. Then after I proceeded to fry them as per my previous batch. There was no difference in texture at all. It was as soft and as puffy as my 1st batch. To try something different, I glazed these doughnuts with caramel and chocolate glaze. Both were heavenly! The caramel glaze is not difficult to make at all and it's very versatile. It can be drizzled over pancakes, crepes, chiffon cakes, ice creams & even apples. However, the caramel sauce is on the sweeter side, so I used it sparingly. For the chocolate glaze, I used dark chocolate. It complement the caramel sauce well coz it's less sweet and has strong cocoa favour. Fat cheeks especially loves the caramel sauce, she'll lick her doughnuts then her fingers then her plate. I had to watch her like a hawk to make sure she does not put her gooey fingers all over the place. When I tell her to stop licking, her response was "it's just to yummy mama!!". Looks like I will have to control myself and not make these treats too often. We're all getting too chubby! =)

Mini Cinnamon Sugar Doughnuts


The past week was terrible for me. Bad news tumbling in one after another. I am still learning to deal with it and am still a little down. In all, I guess bad things only serves to remind me not to take things for granted and it's in times like this I am ever so grateful to my hubby & my sweet darling Fat cheeks for being there for me. To distract myself, I decided to make something that has long been on my "to-make" list...doughnuts! I love doughnuts especially the old school kind that is covered with sugar. This recipe is from a doughnut cookbook which I bought at an Expo sale. I was very pleased with how the doughnuts turned out. They are light, fluffy and very soft. The only problem is that the quantity shown in the cookbook makes huge batches of doughnuts. So I halved the recipe amount and even then I still had a lot of doughnut dough. So I divided the dough into 2 and kept the other half in the fridge so that I can make a 2nd batch the next day. For the 1st batch, I made cinnamon sugar doughnut. The 2nd batch, I made doughnuts with chocolate and caramel glaze. All very yummy. Fat cheeks was hovering at my side the whole time coz she just couldn't wait to get her hands on the doughnuts. =)

Bacon and Cheese Takoyaki


I've been very naughty lately and I think I've used up all my presents for the year! I got myself quite a bit of toys recently and am feeling very guilty about it. Guilty...but happy. Hahaha =). Let me introduce to you my latest addition...my takoyaki pan! I've been eyeing a takoyaki pan for a while already but because it's so expensive, I never seriously considered buying it. Then I came across this pan at a much much affordable price, I knew I had to get it! To top  the icing on the cake, the pre-order was organised by a fellow blogger. Chocolate Cupcakes


I was a nervous wreck last week coz my precious darling left for her school camp. It was only a 3 days 2 night camp but it felt like an eternity to me. Kids nowadays are so blessed, at my time who would have heard of K2 kids going for camps? If I remember correctly, I only participated in camps when I was in my teens. As anxious as I was, I do support such activities as it gives Fat cheeks the opportunity to be independent, to have her own space and also to acquire some life skills. I know she will do well in the camp coz she is very different from me. She  is chatterbox, outspoken, very sociable, very active & participative kind of girl. Her teachers adore her. So I knew I had nothing to worry about...but still I found it so hard to let go. I actually burst into tears when she boarded the bus that was taking them to the campsite. I'm such a crybaby! =)

So anyways, to take my mind off worrying I read up a bit on cupcakes and came across this very interesting recipe for chocolate cupcakes. Chocolate cupcakes sounds common enough but this recipe uses vinegar! I was intrigued. Apparently this recipe does not contain baking powder, instead it uses baking soda. The reaction of baking soda and vinegar will result in a very light, fluffy cake. I had all the ingredients needed on hand, so without hesitation I started baking the cupcake. It would be just nice to welcome my baby home. =) 
As promised by the recipe, the cupcake was really light, fluffy & moist! I was not able to detect any hint of vinegar that was added to it. It's not sweet on its own & it went perfectly well with butter cream frosting. This is definitely a recipe to keep.

We made cupcakes! A pretty & dainty cupcake never fails to put a smile on my face. =) As much as I love frosted cupcakes, I seldom make them coz the pretty butter cream frosting is really rich, sweet & it's very high in calories. You will get what I mean when you see the list of ingredients below. This time however, we decided to indulge ourselves a little and made frostings for our cupcakes. For a healthier cupcake, we made yoghurt cupcake which I have posted earlier here. In all we made 6 cupcakes but we only topped 2 of them with the frosting. Even then, much to Fat cheek's dismay, I make her remove most of the cream before consumption. She complained a little but still enjoyed her cake very much. =)

Tutti Fruitti Yoghurt Chiffon Cake


Though recently I've been totally infatuated with Bento making, I have not forgotten my first love...baking! Last weekend I managed to squeeze in some time to do a little baking while hubby & Fat cheeks napped. With the hot weather nowadays, something light & fluffy would be nice as oppose to cakes that are rich and heavy. So chiffon cake it is. Hubby loves dried fruits and Fat cheeks loves yoghurt so I decided to marry the two & came up with the tutti fruitti yoghurt cake. The result was a light spongy cake with zesty fruit bits in between bites. It's not too sweet and has a slight tangy taste from the yoghurt. Nice. =)

Kawaii Bentos



The past few weeks have been really hectic. Poor Fat cheeks fell ill while I was having my intensive full day revision classes over the past couple of weekends. This was one of the worst viral attacks she ever had with fever going up to 40.6 deg c. I was frantic, worried  & very tired as I had to sponge & care for her a night.  In the day I continued with my classes; I simply can't miss the classes after paying so much for it! =(  These classes were really important as we are taught exam strategies & given tips on important topics. It's a matter of pass or fail. It didn't help that I soon caught her bug & started coughing my lungs out. Even then, I attended classes much to the annoyance of my classmates I'm sure. Poor hubby had to take care of Fat cheeks while I struggled in class. On the bright side though, Fat cheeks has since recovered and is as cheeky as ever. Hubby on the other hand is unwell but the doctor says he should recover by this week. As for me, I am still coughing occasionally but other wise all is well. With so much going on, I didn't have much time to cook or bake but I did manage to dabble in my new found love, bento making. I really enjoy making them & I especially love to see Fat cheeks reaction when I surprise her with these cute looking meals. =)
