White Chocolate Cranberry Cookies

This is another baking session for Fat Cheeks. I prepared the main ingredients for her & let her pick up from there. This time round even I let her try measuring out the vanilla essence and pouring it into the eggs using a small teaspoon. At 4, it's quite a challenge for her but she did well. ^^ She had a blast and the cookies were great. It's a little sweet for my liking, probably due to the white chocolate but the tartness of the cranberries gives it a nice balance. 

Ingredients:
(I used half the ingredients to make a smaller batch)
- 2 1/4 cup all purpose flour
- 1/4 tsp baking powder
- 1/2 salt
- 180g butter
- 1 1/2 cup of brown sugar
- 3 large eggs (I used 2 small eggs)
- 1 1/2 vanilla essence
- 3/4 white chocolate chips
- 1 cup cranberries

Method:
- preheat oven to 180 deg c & line cookie tray
- combine flour, salt and baking powder in a bowl
- in separate bowl, cream butter and sugar till fluffy
- in a small bowl add vanilla to eggs, then slowly beat into butter and sugar mixture
- fold in flour then stir in chocolate chips & cranberries, mix well
- drop spoonful of batter on to tray
- bake for 12-15mins till golden brown
- allow to cool & store in air-tight container

  3. Thank you Jess & Sweety. Having a daughter is indeed very fun. ^^ Hubby always complains that she is the carbon copy of me and that some days he can't tell us apart coz we're both so busy playing masak masak. =)
