Nutella Cupcakes



It's been a while! I miss my baking so much! =) So glad I managed to squeeze in some time to meddle in my kitchen today. My kitchen helper, little miss Fat Cheeks did a fantastic job. She helped me cream the butter & sugar, added eggs & spooned the batter into the cups. So proud of her! The cupcakes turned out really wonderful. It had a nice crusty top, light fluffy insides with creamy Nutella swirled in. We couldn't stop eating eat. Totally yumz!!


Update:
Hubby took a bite & went "OOOO...this is so good you can sell it!". Happiness. =)

Ingredients:
(makes 12 cupcakes)
- 13/4 cup Self rising flour
- 3/4 tsp baking powder
- 140g salted butter
- 3/4 cup sugar
- 4 small eggs
- 3/4 tsp vanilla extract
- 12 tsp Nutella

Method:
- preheat oven to 160 deg c
- line muffin tray
- sift flour & baking powder
- cream butter & sugar till it is pale & fluffy
- add eggs one at a time
- add vanilla extract
- add dry ingredients & beat on low speed till flour is incorporated
- fill cups 3/4 full
- top with a tsp of Nutella on top
- use toothpick to swirl Nutella into batter
- bake 20mins
- remove cupcakes from tray & cool
