Light Blueberry Cheesecake

It's been quite a long while since I've done any cooking. I'm missing it a whole ton! Why? Coz I'm back working. Yups...end of freedom and back into the world of work. Once again I've joined a voluntary welfare organisation and it's a psychiatric rehab centre. A shelter cum day care for persons with mild mental illness. I received quite a few looks of horror when I tell people where I'm working now. Honestly, it was a little daunting when I first started but then I realised that they are actually very warm and innocent, in fact they behave just like little kids. They greet me in the morn, open doors for me when my hands are full, help me clear the table after lunch...basically they are really sweet people. Unfortunately, many of them are marginalized and misunderstood. Most also have very sad stories. My heart goes out to them. Seeing how hard life is for them made me realise that I have so much to be thankful for. So as long as I'm working there, I hope to be a blessing to them. =)

Ok, back to food. For the past 2 weeks I've only managed to baked this light blueberry cheesecake. I adapted the recipe from my previous Japanese Light Cheesecake. I halved the sugar and added 2 tbsps of blueberry jam. It's not bad, but the blueberry masked the taste of cheese. The original is still the best.
