Kueh Dadar


Hubby loves kueh dadar and this is made specially for him. =) This recipe is from Zarina's Home Cooking & once again I scored success with her wonderful recipes. The pancake skin is soft, tender & pliable. The filling is sweet & fragrant. Very yummy, hubby loves it much.

Ingredients for coconut filling:
-250g brown sugar
- 200ml water
- 300g grated coconut with skin removed
- 2 pandan leaves

Method:
- boil water with sugar, when sugar dissolves, add coconut & pandan leaves
- cook till thick & slighty moist
- leave aside to cool

Ingredients for pancake skin:
- 200g flour
- pinch of salt
- 1 large egg
- 250ml fresh milk
- 250ml water
- 2-3 pandan leaves, pound to extract juice
- 1 small drop of pandan paste (optional)

Method:
- brush small pan with oil
- when pan is hot, pour a ladleful of batter in to pan & spread batter thinly
- when bubbles appear on surface, flip pancake over & cook for a while
- to fold pancake, place pancake on a flat plate
- put a large tbsp of coconut mixture on the edge, fold edge over filling, fold sides inwards then roll
- Note: put filling in immediately after each pancake is made
